Sha-kam Paa, Dried beef with dried turnip greens
I finally have the ingredients to cook a classic "Shakam Paa". Haven't cooked it for the longest time, here are the details of my experiment :)
"Paa" refers to a meat dish cooked with vegetables and chillies (fresh or dried). It is more a stew served with little gravy. The meat is always cut bigger or longer in size and it is mostly cooked with vegetables like radish, cabbage, potatoes, mustard greens, fiddlehead ferns, dried turnip greens, dried aubergines, or just with lots of chillies.
The varieties of meat commonly used for Paa are Beef (Nor-sha), Pork (Phag-sha), dried yak meat (yaksha kam), dried beef (sha-kam), and dried pork (si-kam).
100gr. dried beef
25-30gr. dried turnip greens
6 dried red chillies
300+100 ml water
3 Tbsp oil
salt to taste
1. Soak the turnip greens in luke warm water for 20 minutes to re-hydrate. Rinse thoroughly to remove dirts and grits.
2. Cut the dried beef into (8-10 cm) long strips and rinse well. Wash and half the dried chillies lengthwise.
3. Cook the beef in 300ml water with oil and salt for 10 minutes.
4. Add the turnip greens, cover and cook for 10 minutes. lower the flame, toss gently, cover and cook further for 5 more minutes or until the ingredients are cooked.
5. Add 100 ml water and the chillies, cover and cook for 5 more minutes. Lower flame, toss gently, and simmer until water evaporates. Check the seasonings and serve with Rice.
#before adding the chillies, try some turnip greens, if they are tough to chew, add water in small batches and cook further until they are soft/cooked. Dried beef and turnip greens can be tough to chew if not cooked well.
