Dried Fiddlehead ferns with tomato paste (Vegan)
I had my last batch of dried fiddle head ferns soaked up overnight in cold water (yes, this time soaked it in cold water instead of hot water). The next day, it was looking all fresh and ready. Rinsed it thoroughly to remove all the dirt/grit and cooked (covered) for half an hour with water until the ferns were tender.
Had quite an amount of ferns in hand, so decided to experiment again.
Here you go, dried fiddlehead ferns with a bit of italian touch :P.
200 gr. cooked dried ferns
1 clove of garlic (sliced)
1 onion (sliced)
6 - 7 Tbsp tomato paste (200 gr. approx.)
2 tbsp sunflower oil
salt to taste
A dash of chilli powder (use more depending on tolerance)
1. Heat oil in a pan/wok, throw in garlic and onions, and sauté till the onions begin to brown.
2. Reduce flame to low and stir in tomato paste (watch out for splatter).
3. Add ferns, salt and chilli powder. Stir and toss gently until thoroughly combined/coated.
4. lower flame to minimum, simmer for a minute, toss again and serve with rice.
