Chayote Stir Fry

"Fried Iskus"

So i asked around how they like their Chayote and many said stir-fried. The curious me asked how? and they said just fry in oil. Garlic was a common ingredient used.

But a good friend of mine said " i fry it with turmeric and cumin seeds", which tempted me more. And i had to try it by myself. So here it is, must say it is delicious. Mission successful :)

What i used:

1/2 tsp Cumin Seeds
1/2 tsp Turmeric powder
1 onion
1 tomato
1 Chayote (376 gr.)
2 tbsp Oil
1 tsp chopped garlic
Salt & Pepper
A dash of chilli powder/paprika powder

1. Prepare the vegetables (Peel and wash) and cut the chayote into dices, tomato and onions into slices.

2. Heat the oil in a wok on a medium heat, throw in cumin seeds followed by chopped garlic. Sauté until the garlic turns light brown.

3. Add onions and sauté for a minute or two. Throw in Chayote and tomatoes, stir fry for 3 minutes, cover and cook for 5 minutes (give it a toss in between).

4. Remove the lid and continue stir fry for 3 more minutes or until the Chayotes are done. Season with salt, pepper and chilli/paprika powder and serve.
